
Grant is the founder and Managing Director of cutting-edge Sydney based international bar
consultancy company “Bar Concepts” and “Grant Collins Drinks Consultancy”. As well as. The
founder/owner of Gin Lane Sydney & Dry Martini Sydney.
Grant started his career in the US before returning to his native London to manage the hip
Zander Bar which earned “London Cocktail Bar of The Year 2010” and himself the prestigious
title of “UK Bar Manager of the Year” 2010.
Discovering the allure of the Sydney lifestyle after a brief holiday, Grant took over as Bar
Manager at the newly opened Water Bar at the W Hotel in Woolloomooloo in 2010. Within 5
months, it was awarded the “Bar of the Year 2010” by the Sydney Morning Herald. The
following year he opened the multi award winning Zeta Bar at the Sydney Hilton. Which went
onto be listed in the “Top 50 Bars In The World” twice.
The following year, Grant won the Australian Liquor Industry’s Bar Manager of the Year 2014
and 2014”. Also, in 2015 he took out “Hoteliers Magazine awarded Hotel Bar Cocktail List of
the Year” to the Water Bar and Grant also won the “AHA Food & Beverage Employee of the
Year”. Incredibly Grant`s passion and drive for cocktail creation led him to receiving 18
awards on behalf of the Water Bar in a little under 3 years.
Grant has also consulted for the award winning Potato Head Restaurant & Bar in Jakarta & Bali
and The White Hart in Neutral Bay (which won “Australian Small Bar Of The Year 2018”) in 2018
he conceptualized Fix at Hilton Surfers Paradise which opened to rave reviews, as has the
brand new “The Collins” at The Hilton Adelaide with The Collins Bar, Adelaide winning “South
Australia Small Bar Of The Year” within 3 months of opening.
In 2019 he turned his attention to the US, where he successfully opened Match in Boston and
Seattle and SM23 in New York which was awarded “Bar of The Year 2019” at the New Jersey
nightlife awards as well as “One Of The 50 Top Bars in the USA” in 2019.
In 2020 Grant was invited for a guest stint on The World cruise line, a luxury liner that
circumnavigates the World. Where he was asked to be a guest speaker and to pass on his
knowledge to train and educate bar staff. A regular contributor to GQ, Bars & Clubs, CLASS
and Bartender magazines and the Sydney Morning Herald (Sydney) Magazine, Grant’s media
and professional profile positions him as one of the World`s premier liquor industry consultant.
Grant was the opening beverage advisor for the hip new “W Osaka”, Japan as well as
opening the award winning “Gin Lane” at Kensington St to much acclaim and a new
Mexican offerings “Cartel, Chippendale” on Kensington St.
Gin Lane was awarded “Small Bar Of The Year” 2022 & “Australian Best Gin Bar” 2023 by
Sitchu magazine as well as being nominated as a finalist for the “Australian Gin Bar Of The
Year” by Bartender Magazine 5 years running.
W Hotels used Grant’s proven winning formula to set up their growing stable of international
bars also consulting on the opening of the As well as Karma resorts in Thailand and Bali. The
Water Bar in Sydney went on to win 16 awards under Grants reign including the prestigious
“One of The Top 10 Bars in The World” by Conde Nast Traveler.

He went onto open a further 4 more Hotels & Resorts with the luxury W Brand in Bali, W
Maldives, W Hong Kong, W Seoul, W Maldives & more recently W Osaka in 2023, all to great
acclaim.
Grant`s vast skills and expertise were called upon by luxury resorts Conrad Maldives & “W
Hotels” Maldives where he was flown over as a guest presenter for a UK media event. The
resort was so impressed that they hired him to revamp their beverage program on the Island.
Consulting all over the World has brought Grant global recognition. Working in the US, Bali,
China, Japan, India, Singapore, Thailand, as well as setting up the hip new Lotus Bar in Hong
Kong which has opened to rave reviews and designing the new bars and cocktail lists for the
multi-award winning Ku-De-Ta in Bali Grant was brought on board to consult on a new luxury
venue in Jakarta, Potato Head, creating a bespoke and innovative cocktail list to great
acclaim.
In 2022 Grant worked with Hyatt Australia to conceptualize and set up the groundbreaking
Zephyr Bar at the Hyatt Regency in Sussex St, Sydney to much acclaim
In 2023 Grant and his team started working with Vibe Hotels, Sydney. Updating their beverage
programs, training their teams and opening a new concept bars.
Impressed by his global experience and unique drinks design. Vibe Hotels enlisted Grant to
design their new venue in Melbourne, as well as curating the beverage offering for Vibe
Melbourne unique new uber luxe rooftop bar “Fleet” in 2024.
Grant is now one of the most sought-after guest speakers and lecturers at industry events and
expos such as the London, New York, Sydney and Melbourne Bar shows and well as being
one of the Worlds most prominent bar consultants.
He is also currently working on more projects in the UK, Maldives, Mauritius, & a new Martini
Bar “Dry Martini” in Sydney. He hosts beverage segments for Channel 10, as well as works with
luxury brands such as Smeg, Nespresso, Tanqueray Gin, Belvedere Vodka & Hennessy
Cognac. He is a published author, and is beginning his second book and hosts celebrity
events and masterclasses for Sydney`s elite.
